Rachel worked as an Administrative Assistant for Premier Health Chiropractic, where she was able to learn the systems of the chiropractic industry. At this time, she got a healthy understanding of the importance of demographics in advertising.

She worked under the Director of Marketing at Health Expos, among many other events, where she was able to promote their company.

She says that she garnered a lot of connections from such events, and these proved to be useful later on since most of the leads quickly turned into clients.

Lettuce Entertain You Restaurants

Between May 2009 and August of the same year, Rachel worked as a Corporate Management Interne for Lettuce Entertain You Restaurants (LEYE), in the St. Paul Area of Greater Minneapolis.

She learned the duties and responsibilities that come with being a restaurant manager while working at LEYE.

She attended seminars and educational classes where she learned a lot about how to oversee a restaurant.

She was able to extend this knowledge to the management side of business, especially where it relates to costs per square foot, overheads, and the bottom line.

During this time, she came up with a concept for a brand new LEYE restaurant. This included a new menu design, an interior design of the restaurant, and an expense report.

When she finished her internship, she was flown to Chicago to present the concept to Richard Melman, the founder of LEYE. She recalls that the experience was exciting and fun.
